Preparation Method :
- Boil, steam or microwave potato until tender, drain; mash.
- Push potato through a sieve.
- You will need ½ cup mashed potato for this recipe.
- While potato is still warm, add butter; mix well.
- Stir in sifted icing sugar and coconut.
- Add peppermint oil and food colouring to 1/3 cup of coconut mixture; mix well.
- Add cocoa to remaining coconut mixture; mix well.
- Roll level teaspoons of peppermint mixture into balls.
- Flatten 1 tablespoon of the chocolate mixture in palm of hand, top with a peppermint ball and bring chocolate around ball to enclose peppermint mixture.
- Repeat with remaining peppermint and chocolate mixtures.
- Roll mint coconut roughs in drinking chocolate or shredded coconut, if desired.

- 50 grams soft butter
- 200 grams icing sugar mixture
- 150 grams coconut
- Few drops peppermint oil
- Few drops green food colouring
- 1 ½ tablespoons cocoa
