MINT COCONUT ROUGHS

Makes :

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Boil, steam or microwave potato until tender, drain; mash.
  • Push potato through a sieve.
  • You will need ½ cup mashed potato for this recipe.
  • While potato is still warm, add butter; mix well.
  • Stir in sifted icing sugar and coconut.
  • Add peppermint oil and food colouring to 1/3 cup of coconut mixture; mix well.
  • Add cocoa to remaining coconut mixture; mix well.
  • Roll level teaspoons of peppermint mixture into balls.
  • Flatten 1 tablespoon of the chocolate mixture in palm of hand, top with a peppermint ball and bring chocolate around ball to enclose peppermint mixture.
  • Repeat with remaining peppermint and chocolate mixtures.
  • Roll mint coconut roughs in drinking chocolate or shredded coconut, if desired.

INGREDIENTS

  • 200 grams potato, peeled, chopped
  • 50 grams soft butter
  • 200 grams icing sugar mixture
  • 150 grams coconut
  • Few drops peppermint oil
  • Few drops green food colouring
  • 1 ½ tablespoons cocoa
