LIME AND SWEET POTATOES BUTTER CAKE

Preparation Method :

  • Grease 20 cm ring cake pan, cover base with baking paper.
  • Boil, steam or microwave Sweet potatoes until tender; drain, mash; cool.
  • You need ¾ cup Sweet potatoes in this recipe.
  • Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy, beat in eggs 1 at a time; beat until combined.
  • Transfer mixture to large bowl.
  • Stir in Sweet potatoes, sifted flours and milk; mix well.
  • Spread mixture into prepared pan.
  • Bake in moderate oven about 40 minutes.
  • Cool on wire rack. Sprinkle with sifted icing sugar, if desired.

 

INGREDIENTS

  • 250 grams Sweet potatoes, peeled, chopped
  • 150 grams soft butter
  • 1 teaspoon grated lime rind
  • 150 grams castor sugar
  • 2 eggs
  • 250 grams self-Raising flour
  • 50 grams plain flour
  • 50 ml milk
