LIME AND SWEET POTATOES BUTTER CAKE

Preparation Method :
- Grease 20 cm ring cake pan, cover base with baking paper.
- Boil, steam or microwave Sweet potatoes until tender; drain, mash; cool.
- You need ¾ cup Sweet potatoes in this recipe.
- Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy, beat in eggs 1 at a time; beat until combined.
- Transfer mixture to large bowl.
- Stir in Sweet potatoes, sifted flours and milk; mix well.
- Spread mixture into prepared pan.
- Bake in moderate oven about 40 minutes.
- Cool on wire rack. Sprinkle with sifted icing sugar, if desired.

- 250 grams Sweet potatoes, peeled, chopped
- 150 grams soft butter
- 1 teaspoon grated lime rind
- 150 grams castor sugar
- 2 eggs
- 250 grams self-Raising flour
- 50 grams plain flour
- 50 ml milk
