Preparation Method :
- Combine butter, water, sugar and golden syrup in pan, stir over heat, without boiling, until sugar is dissolved.
- Bring to boil, without stirring, remove from heat; cool.
- Transfer mixture to bowl, stir in egg yolks, milk, then sifted flour and Sweet potatoes; beat until smooth.
- Beat egg whites in small bowl with electric mixer until soft peaks form; gently fold into batter.
- Drop about 1/3 cup of mixture into heated greased waffle iron.
- Close iron, cook about 1 minute or until waffle is browned. Repeat with remaining batter.
- Serve waffles with maple syrup and ice-cream, if desired.

- 2 tablespoons brown sugar
- 2 tablespoons golden syrup
- 2 eggs, separated
- 150 ml milk
- 150 grams plain flour
- 1 cup mashed Sweet potatoes
