Preparation Method :
- Sift dry ingredients into bowl, rub in butter, make well in centre, add Sweet potatoes, buttermilk and enough water to mix to soft, sticky dough.
- Turn dough onto lightly floured surface; knead lightly until smooth.
- Press dough into 18 cm round, place on greased oven tray.
- Cut a cross through top of dough, about 1cm deep.
- Brush dough with a little extra milk, dust with a little extra flour.
- Bake in hot oven about 40 minutes or until damper sounds hollow when tapped.
INGREDIENTS
- 500 grams self-Raising flour
- ½ teaspoon salt
- 1 tablespoon castor sugar
- 1 teaspoon mixed spice
- 30 grams butters
- 500 grams mashed Sweet potatoes
- 250 ml buttermilk
- 50 ml water, approximately
