STUFFED POTATO RECTANGLES

Preparation Method :

  • Scoop out the centre of the potatoes leaving thin walls at the sides.
  • Fry the potato shells and the scoops separately. Make sure not let them change colour but let the sides become crisp.
  • Cool the scooped out portion of the potatoes and mash. Add salt, red chilli powder, garam masala, lemon juice, cashew nuts, raisins, and ghee.
  • Stuff the mixture into the potato cases.
  • Arrange 4 pieces on the pre heated moderate oven and sprinkle grated cheese on top. Bake till golden brown in colour.
  • Sprinkle with green coriander and chaat masala, serve hot.

INGREDIENTS

  • 1 kg Potatoes, washed, peeled
  • 25 grams Cheese, grated
  • 1 tablespoon Ghee
  • 10-12 Cashew nuts, broken
  • 1 teaspoon Raisins  
  • 1 tablespoon Green fresh coriander leaves, chopped
  • A pinch Garam masala
  • Juice of 1 Lemon  
  • Red chilli powder and Salt to taste
  • ½ teaspoon Chaat masala
  • Cooking oil for frying
