STUFFED POTATO RECTANGLES

Preparation Method :
- Scoop out the centre of the potatoes leaving thin walls at the sides.
- Fry the potato shells and the scoops separately. Make sure not let them change colour but let the sides become crisp.
- Cool the scooped out portion of the potatoes and mash. Add salt, red chilli powder, garam masala, lemon juice, cashew nuts, raisins, and ghee.
- Stuff the mixture into the potato cases.
- Arrange 4 pieces on the pre heated moderate oven and sprinkle grated cheese on top. Bake till golden brown in colour.
- Sprinkle with green coriander and chaat masala, serve hot.
INGREDIENTS
- 1 kg Potatoes, washed, peeled
- 25 grams Cheese, grated
- 1 tablespoon Ghee
- 10-12 Cashew nuts, broken
- 1 teaspoon Raisins
- 1 tablespoon Green fresh coriander leaves, chopped
- A pinch Garam masala
- Juice of 1 Lemon
- Red chilli powder and Salt to taste
- ½ teaspoon Chaat masala
- Cooking oil for frying
