BACON-STUFFED POTATOES

Preparation Method :
- Prick the potatoes with a fork and bake in a preheated moderately hot oven for 2 hours.
- When cooked, cut off the tops of the potatoes lengthwise and scoop out the centers, taking care to keep the skins intact.
- Mash the potato m a bowl, and add the margarine, bacon, milk, nuts, cheese, parsley, salt and pepper.
- Fill the potato shells with the mixture and bake in a preheated moderately hot oven for 15 minutes.
INGREDIENTS
- 8 large potatoes, well scrubbed
- 50 grams margarine
- 150 grams bacon, denuded, chopped and grilled
- 4 tablespoons skimmed milk
- 50 grams walnuts, chopped
- 100 grams Cheddar cheese, grated
- 2 tablespoon chopped parsley
- Salt
- Freshly ground black pepper
- Parsley sprigs, to garnish
