SWEET POTATO AND ONION SOUP

- Heat the oil in a large saucepan and add the diced sweet potatoes and carrot, sliced onions and garlic. Sauté the vegetables gently for 5 minutes, stirring constantly.
- Pour in the vegetable stock and orange juice and bring them to the boil.
- Reduce the heat to a simmer, cover the saucepan and cook the vegetables for 20 minutes or until the sweet potato and carrot cubes are tender.
- Transfer the mixture to a food processor or blender in batches and process for 1 minute until pureed. Return the puree to the rinsed-out saucepan.
- Stir in the natural yogurt and chopped coriander (cilantro) and season to taste.
- Serve the soup in warm bowls and garnish with coriander (cilantro) sprigs and orange rind.

- 3 tablespoon sesame oil
- 1 kg sweet potatoes, diced
- 2 carrots, diced
- 4 onions, sliced
- 4 garlic cloves, crushed
- 750 ml vegetable stock
- 500 ml unsweetened orange juice
- 250 ml low-fat natural yogurt
- 3 tablespoon chopped fresh coriander
- Salt and pepper
To Garnish
- Coriander (cilantro) sprigs
- Orange rind
