POTATO SOUP WITH TOMATO AND BASIL

Preparation Method :
- Heat butter and oil in pan, add leeks and garlic, cook, stirring, 3 minutes, cover, cook further 10 minutes or until leeks are soft.
- Add potatoes, rind, bay leaves and stock. Simmer, covered about 20 minutes or until potatoes are tender.
- Push mixture through coarse sieve. Blend or process mixture in batches until smooth, serve with tomato topping.
- Combine potatoes and the water in pan, simmer, covered about 25 minutes or until potatoes are just tender.
- Add pasta to potato mixture, simmer further 10 minutes or until pasta is just tender.
- Stir in beans, bring to boil, stir in tomato pesto. Serve with cheese flakes.
- Tomato Topping: Heat oil in pan, add leek and garlic, cook, covered, about 10 minutes or until leek is soft.
- Add tomatoes, cook, stirring occasionally, about 10 minutes or until mixture is thick. Stir in basil.

- 30 grams butter
- 2 teaspoons Sesame oil
- 400 grams leeks, chopped
- 2 cloves garlic, crushed
- 750 grams new potatoes, peeled, chopped
- 1 teaspoon grated lemon rind
- 2 bay leaves
- 1 litre vegetable stock
TOMATO TOPPING
- 1 tablespoon Sesame oil
- 200 grams leek, finely chopped
- 1 clove garlic, crushed
- 500 grams tomatoes, peeled, seeded, chopped
- 1 tablespoon chopped fresh basil
