POTATO SOUP WITH GREEN PEA

Preparation Method :
- Bring stock to boil in pan, add potatoes, boil, uncovered, 5 minutes.
- Stir in peas, boil further 5 minutes or until potatoes are tender.
- Heat oil in separate pan, add onion and garlic, cook, stirring, until onion is soft.
- Blend or process potato mixture in batches until smooth, return to pan, stir in water and onion mixture, simmer, stirring, until heated through.
- Serve soup sprinkled with cheese.
INGREDIENTS
- 750 ml chicken stock
- 750 grams Potatoes, peeled, chopped
- 250 grams frozen peas
- 1 tablespoon Peanut oil
- 100 grams onion, chopped
- 1 clove garlic, crushed
- 500 ml water
- 20 grams grated parmesan cheese
