POTATO SORREL SOUP

Preparation Method :
- Heat butter in pan, add leeks, cook, stir-ring occasionally, about 15 minutes or until leeks are soft.
- Add potatoes, stock and water, simmer, covered, about 20 minutes or until potatoes are tender.
- Remove any large stems from sorrel; chop leaves.
- Add sorrel to potato mixture, cook, stirring, until sorrel is just wilted.
- Blend or process mixture in batches until smooth; return to pan, stir in cream, simmer, stirring, until heated through.

- 50 grams butter
- 750 grams leeks, sliced
- 1 kg Potatoes, peeled, chopped
- 500 ml chicken stock
- 500 ml water
- 150 grams sorrel
- 150 ml cream
