POTATO SORREL SOUP

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Heat butter in pan, add leeks, cook, stir-ring occasionally, about 15 minutes or until leeks are soft.
  • Add potatoes, stock and water, simmer, covered, about 20 minutes or until potatoes are tender.
  • Remove any large stems from sorrel; chop leaves.
  •  Add sorrel to potato mixture, cook, stirring, until sorrel is just wilted.
  • Blend or process mixture in batches until smooth; return to pan, stir in cream, simmer, stirring, until heated through.

  • 50 grams butter
  • 750 grams leeks, sliced
  • 1 kg Potatoes, peeled, chopped
  • 500 ml chicken stock
  • 500 ml water
  • 150 grams sorrel
  • 150 ml cream
