POTATO AND BEAN SOUP WITH TOMATO PESTO

Preparation Method :
- Combine potatoes and the water in pan, simmer, covered about 25 minutes or until potatoes are just tender.
- Add pasta to potato mixture, simmer further 10 minutes or until pasta is just tender.
- Stir in beans, bring to boil, stir in tomato pesto. Serve with cheese flakes.
Tomato Pesto
- Blend or process tomatoes, basil, garlic and cheese until smooth.
- Add oil gradually in a thin stream while motor is operating.
INGREDIENTS
- 1 kg potatoes, peeled, chopped
- 1.5 litres Water
- 150 grams Soup pasta
- 350 grams can red kidney beans, rinsed, and drained
- 650 grams cans butter beans, rinsed, drained
- 50 grams parmesan cheese flakes
TOMATO PESTO
- 250 grams tomatoes, peeled, seeded, chopped
- 150 grams firmly packed fresh basil leaves
- 2 cloves garlic, crushed
- 25 grams grated parmesan cheese
- 100 ml Sesame oil
