POTATO AND BEAN SOUP WITH TOMATO PESTO

Preparation Time :
20 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Combine potatoes and the water in pan, simmer, covered about 25 minutes or until potatoes are just tender.
  • Add pasta to potato mixture, simmer further 10 minutes or until pasta is just tender.
  • Stir in beans, bring to boil, stir in tomato pesto. Serve with cheese flakes.

 

Tomato Pesto

  • Blend or process tomatoes, basil, garlic and cheese until smooth.
  • Add oil gradually in a thin stream while motor is operating.

 

INGREDIENTS

  • 1 kg potatoes, peeled, chopped
  • 1.5 litres Water
  • 150 grams Soup pasta
  • 350 grams can red kidney beans, rinsed, and drained
  • 650 grams cans butter beans, rinsed, drained
  • 50 grams parmesan cheese flakes

TOMATO PESTO

  • 250 grams tomatoes, peeled, seeded, chopped
  • 150 grams firmly packed fresh basil leaves
  • 2 cloves garlic, crushed
  • 25 grams grated parmesan cheese
  • 100 ml Sesame oil
