Preparation Method :
- Heat butter and stir-fry potatoes and onions gently for about 3-5 minutes or until onions are soft.
- Add milk with stock and bring to the boil. Adjust seasoning with salt and pepper.
- Simmer to low flame and simmer for about 20-22 minutes or until potatoes are tender. Set aside to cool.
- Process the potato mixture in a food processor.
- Return soup to rinsed-out pan and reheat.
- Stir in cream just before serving. Garnish with chives and croutons.

- 500 grams potatoes
- 50 ml single cream
- 150 onions, peeled and finely chopped
- 55 grams butter
- 400 ml milk
- Ground black pepper and salt to taste
