CREAM OF POTATO SOUP WITH SUN-DRIED TOMATOES

Preparation Method :
- Heat oil in pan, add onions, cook, stirring, until soft.
- Add potatoes and stock, simmer, uncovered, about 20 minutes or until potatoes are tender.
- Blend or process mixture in batches until smooth, return to pan; add cream, simmer, stirring, until heated through.
- Stir tomatoes and oregano into cream of potato soup before reheating.
INGREDIENTS
- 1 tablespoon Sesame oil
- 300 grams Onions, chopped
- 1 kg Old Potatoes, peeled, chopped
- 1.5 litres Chicken stock
- 300 ml cream
- 50 grams drained sun-dried tomatoes, finely chopped
- 50 grams finely chopped fresh oregano
