CREAM OF POTATO SOUP WITH PARMESAN CHEESE

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat oil in pan, add onions, cook, stirring, until soft.
  • Add potatoes and stock, simmer, uncovered, about 20 minutes or until potatoes are tender.
  • Blend or process mixture in batches until smooth, return to pan; add cream, simmer, stirring, until heated through.
  • Stir cheese and sage into cream of potato soup before reheating.

 

INGREDIENTS

  • 1 tablespoon Sesame oil
  • 300 grams Onions, chopped
  • 1 kg Old Potatoes, peeled, chopped
  • 1.5 litres Chicken stock
  • 300 ml cream
  • 50 grams finely grated parmesan cheese
  • 2 tablespoons finely chopped fresh sage
