CHILLED POTATO SOUP

Preparation Time :
15 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat butter in a pot. Add leeks, onions and celery.
  • Stir-fry over low heat for 5-7 minutes or until vegetables are soft but not coloured.
  • Add potatoes and stock. Simmer for 20-22 minutes or until potatoes are tender.
  • Process the vegetable in a food processor until smooth.
  • Adjust seasoning with nutmeg, cayenne pepper, salt and pepper to taste.
  • Allow soup to cool.
  • Ladle soup into individual soup bowls.
  • Add cream and garnish with chives.

INGREDIENTS

  • 350 grams potatoes, peeled and sliced
  • 1.5 litres hot vegetable stock
  • 150 grams onions peeled and chopped
  • 50 grams butter
  • 450 ml double cream, chilled
  • 1 tablespoon finely sliced chives
  • 4 leeks, white portion only, sliced.
  • 2 stalks celery, chopped
  • A pinch grated nutmeg
  • A pinch cayenne pepper
  • Ground black pepper and salt to taste
