CHILLED POTATO SOUP

Preparation Method :
- Heat butter in a pot. Add leeks, onions and celery.
- Stir-fry over low heat for 5-7 minutes or until vegetables are soft but not coloured.
- Add potatoes and stock. Simmer for 20-22 minutes or until potatoes are tender.
- Process the vegetable in a food processor until smooth.
- Adjust seasoning with nutmeg, cayenne pepper, salt and pepper to taste.
- Allow soup to cool.
- Ladle soup into individual soup bowls.
- Add cream and garnish with chives.
INGREDIENTS
- 350 grams potatoes, peeled and sliced
- 1.5 litres hot vegetable stock
- 150 grams onions peeled and chopped
- 50 grams butter
- 450 ml double cream, chilled
- 1 tablespoon finely sliced chives
- 4 leeks, white portion only, sliced.
- 2 stalks celery, chopped
- A pinch grated nutmeg
- A pinch cayenne pepper
- Ground black pepper and salt to taste
