Preparation Method :
- Heat the oil in a pot. Stir-fry onion and garlic until softened.
- Add potato cubes, curry powder, salt and stock.
- Bring to the boil and simmer for 20-22 minutes or until potatoes are cooked.
- Add milk with mint leaves and simmer for another 3-5 minutes, remove from the heat.
- Cool slightly, then puree in a blender.
- Reheat soup before serving. Sprinkle with fried grated potato and serve hot.
INGREDIENTS
- 500 grams potatoes, peeled and cut into small cubes
- 750 ml vegetable stock
- 200 ml milk
- 2 tablespoon Cooking oil
- 1 potato, washed, peeled, grated and deep-fried
- 1 onion, peeled and finely chopped
- 2-3 garlic cloves, peeled and finely chopped
- 1½ teaspoon curry powder
- 1 teaspoon dried mint leaves
- Salt to taste
