VEGETABLE CURRY WITH BABY POTATOES

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft; add ground spices, cook, stirring, until fragrant.
  • Add potatoes, cook 5 minutes, stirring occasionally.
  • Add undrained crushed tomatoes and sugar, simmer, covered, 15 minutes.
  • Add cauliflower, cook, covered, 5 minutes; add peas, cook until all vegetables are tender.
  • Just before serving, stir in cream and sprinkle curry with fresh coriander.

INGREDIENTS

  • 1 tablespoon sesame oil
  • 200 grams onion, sliced
  • 2 cloves garlic, crushed
  • 3 teaspoons ground coriander
  • 1 tablespoon ground cumin
  • ½ teaspoon ground turmeric
  • ¼ teaspoon chili powder
  • 1 tablespoon garam masala
  • 500 grams new baby potatoes, quartered
  • 500 grams cans tomatoes
  • ½ teaspoon sugar
  • 500 grams cauliflower, chopped
  • 150 grams frozen peas
  • 250ml cream
  • 2 tablespoons chopped fresh coriander
