SPICY PEAS - POTATO BHAJI

Preparation Time :
15 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat the oil and stir-fry onion over medium heat for about 3-5 minutes or until brown but not crisp.
  • Simmer to low flame and stir in turmeric with cumin, ginger, chilli and potatoes. Stir-fry for another 5-7 minutes.
  • Transfer the onion and potato mixture to a casserole dish. Add peas and mix well.
  • Cover and bake in a preheated oven at 190°C / 375°F / Gas mark 5 for about 20 minutes or until the vegetables are tender.
  • Transfer to a small serving bowl and serve hot.

INGREDIENTS

  • 550 grams potatoes, peeled and diced
  • 225 grams frozen peas, blanched in hot water
  • 50 ml Cooking oil  
  • 1 onion, peeled and thinly sliced
  • 1 teaspoon ground turmeric    
  • 1 teaspoon ground cumin    
  • ½ teaspoon finely grated ginger
  • 1 green chilli, halved, seeded and finely chopped
