SPICY PEAS - POTATO BHAJI

Preparation Method :
- Heat the oil and stir-fry onion over medium heat for about 3-5 minutes or until brown but not crisp.
- Simmer to low flame and stir in turmeric with cumin, ginger, chilli and potatoes. Stir-fry for another 5-7 minutes.
- Transfer the onion and potato mixture to a casserole dish. Add peas and mix well.
- Cover and bake in a preheated oven at 190°C / 375°F / Gas mark 5 for about 20 minutes or until the vegetables are tender.
- Transfer to a small serving bowl and serve hot.
INGREDIENTS
- 550 grams potatoes, peeled and diced
- 225 grams frozen peas, blanched in hot water
- 50 ml Cooking oil
- 1 onion, peeled and thinly sliced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- ½ teaspoon finely grated ginger
- 1 green chilli, halved, seeded and finely chopped
