POTATOES WITH PEAS

Preparation Method :
- Heat the oil in a heavy-based saucepan and add the cumin seeds. When the seeds begin to sizzle, add the potatoes and onion.
- Fry for 5 minutes or until the potatoes turn golden.
- Simmer to low flame. Add the ground spices, salt, tomato puree, tomatoes and green chilli. Mix well.
- Pour 2 cups of water. Cover and cook for 5-7 minutes or until the potatoes are tender.
- Add the peas and fresh coriander and boil for a minute or two.
- Finally dot with butter and garnish with fresh coriander leaves before serving.
- Serve with Saffron Rice.
INGREDIENTS
- 550 grams potatoes, peeled and cut into medium cubes
- 150 grams tomatoes, peeled and chopped
- 100 grams frozen peas, boiled and drained
- 50 ml Cooking oil
- 1 onion, finely chopped
- ½ teaspoon cumin seeds
- 1 tablespoon tomato puree
- Salt to taste
- 1 whole green chilli
- 2 tablespoons finely chopped fresh coriander
- 1 tablespoon butter
- Fresh coriander leaves
Ground Spices
- 1 teaspoon ginger paste
- ½ teaspoon chilli powder
- ½ teaspoon coriander powder
- 1 teaspoon fennel seeds
- ½ teaspoon cumin powder
- ½ teaspoon turmeric powder
