POTATOES WITH PEAS

Preparation Method :

  • Heat the oil in a heavy-based saucepan and add the cumin seeds. When the seeds begin to sizzle, add the potatoes and onion.
  • Fry for 5 minutes or until the potatoes turn golden.
  • Simmer to low flame. Add the ground spices, salt, tomato puree, tomatoes and green chilli. Mix well.
  • Pour 2 cups of water. Cover and cook for 5-7 minutes or until the potatoes are tender.
  • Add the peas and fresh coriander and boil for a minute or two.
  • Finally dot with butter and garnish with fresh coriander leaves before serving.
  • Serve with Saffron Rice.

INGREDIENTS

  • 550 grams potatoes, peeled and cut into medium cubes
  • 150 grams tomatoes, peeled and chopped
  • 100 grams frozen peas, boiled and drained
  • 50 ml Cooking oil
  • 1 onion, finely chopped
  • ½ teaspoon cumin seeds
  • 1 tablespoon tomato puree
  • Salt to taste
  • 1 whole green chilli
  • 2 tablespoons finely chopped fresh coriander
  • 1 tablespoon butter
  • Fresh coriander leaves

Ground Spices

  • 1 teaspoon ginger paste
  • ½ teaspoon chilli powder
  • ½ teaspoon coriander powder
  • 1 teaspoon fennel seeds
  • ½ teaspoon cumin powder
  • ½ teaspoon turmeric powder
