POTATOES WITH OKRA

Preparation Method :
- Heat the oil in a frying pan. When hot add the cumin seeds, sauté until the seeds splutter. Add in the potatoes.
- Fry the potatoes for about 2-3 minutes then add the okra. Stir, cover and cook, stir occasionally for about 10-12 minutes or until the potatoes are just soft.
- Mix in the ground spices and adjust seasoning with salt and cook for a further 5-7 minutes.
- Add the lemon juice and fresh coriander and serve with lemon rice and roti.
INGREDIENTS
- 500 grams, okra, washed, pat dried, Top and tail, cut each okra into 4-5 pieces
- 50 ml Cooking oil
- 250 grams potatoes, cubed
- 1 tablespoon lemon juice
- 1 tablespoon finely chopped fresh coriander
- Salt, to taste
- ½ teaspoon cumin seeds
Ground Spices
- ½ teaspoon chilli powder
- ½ teaspoon ginger paste
- ½ teaspoon cumin seeds
- ½ teaspoon coriander powder
