POTATOES IN SESAME SEEDS

Preparation Method :

  • Peel the potatoes and cut each into 3 roundels. Cut each roundel into 3 pieces.
  • Preheat a griddle over high heat and roast sesame seeds till they turn light red. Make a smooth paste using water.
  • Preheat oil in a heavy bottomed pan. Fry the potatoes lightly in 2 batches over high heat. Transfer to a plate.
  • In the remaining oil add black mustard seeds, red chilies and curry leaves. After a minute add onion and fry till golden brown.
  • Add ginger and garlic paste and fry till the mixture leaves the fat.
  • Add red chili powder, tamarind pulp, remaining water and salt and bring to a boil.
  • Add potatoes and simmer and cover till the potatoes get tender. Add garam masala.

INGREDIENTS

  • 8 medium sized potatoes 
  • 200 grams sesame seeds 
  • 500 ml water
  • 500 ml mustard oil
  • 1 tablespoon black mustard seeds
  • 4 red chilies
  • 2 sprig curry leaves
  • 2 large onion, chopped 
  • 2 tablespoon ginger paste 
  • 2 tablespoon garlic paste
  • 1 teaspoon turmeric powder 
  • 2 teaspoon red chili powder 
  • 5 tablespoons tamarind pulp 
  • Salt to taste
  • 2 teaspoon garam masala
