POTATOES IN SESAME SEEDS

Preparation Method :
- Peel the potatoes and cut each into 3 roundels. Cut each roundel into 3 pieces.
- Preheat a griddle over high heat and roast sesame seeds till they turn light red. Make a smooth paste using water.
- Preheat oil in a heavy bottomed pan. Fry the potatoes lightly in 2 batches over high heat. Transfer to a plate.
- In the remaining oil add black mustard seeds, red chilies and curry leaves. After a minute add onion and fry till golden brown.
- Add ginger and garlic paste and fry till the mixture leaves the fat.
- Add red chili powder, tamarind pulp, remaining water and salt and bring to a boil.
- Add potatoes and simmer and cover till the potatoes get tender. Add garam masala.

- 8 medium sized potatoes
- 200 grams sesame seeds
- 500 ml water
- 500 ml mustard oil
- 1 tablespoon black mustard seeds
- 4 red chilies
- 2 sprig curry leaves
- 2 large onion, chopped
- 2 tablespoon ginger paste
- 2 tablespoon garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoon red chili powder
- 5 tablespoons tamarind pulp
- Salt to taste
- 2 teaspoon garam masala
