POTATO STUFFING IN BITTER GOURD

Preparation Method :
- Scrape bitter gourd. Slit around 5 inches in between and remove seeds.
- Smear salt all over and set aside for an hour. Boil over high heat for 10 minutes. Set aside.
- Peel and mash potatoes. Finely chop the onion.
- Preheat oil in a small frying pan. Fry onion till golden brown.
- Add potatoes, turmeric powder and salt and fry over high heat for 5 minutes. Add lemon juice and set aside.
- Stuff bitter gourd with fried potatoes. Tie the bitter gourd with thread so that the stuffing does not come out.
- Preheat the remaining oil in the frying pan. Fry stuffed bitter gourds till they are pale brown on all sides.
- Cover and cook over low heat till gourds get cooked completely. Cut each stuffed gourd into 2 pieces with a knife.

- 4 large bitter gourds
- 4 medium sized boiled potatoes
- 2 onions
- 8 tablespoons peanut oil
- 1 teaspoon turmeric powder
- Salt to taste
- Juice of lemon
