POTATO MASALA

Preparation Method :
- Heat the oil in a non-stick frying pan. Add the mustard seeds, chillies and curry leaves, cook for about 20-30 seconds.
- When the seeds splutter add the onion, tomato and gently sauté for 5-7 minutes or until soft and just golden.
- Stir in the turmeric, coriander and salt to taste.
- Add the potatoes and sauté for 5 minutes, add little hot water if needed.
- The potatoes should be moist.
- Stir in the dried mango powder and lemon juice and serve hot.
INGREDIENTS
- 550 grams potatoes, boiled
- 1 onion, sliced
- 1 tomato, siced
- ½ teaspoon turmeric powder
- 1 tablespoon coriander powder
- 25 ml IDHAYAM sesame oil
- ½ teaspoon dried mango powder
- 1 teaspoon brown mustard seeds
- 3 small, dried red chillies, lightly crushed
- Salt to taste
- Lemon juice to taste
- Few fresh curry leaves
