Preparation Method :
- Melt butter in a large frying pan over moderate heat. Stir-fry shallots, celery and garlic for 3-5 minutes or until shallots are soft and translucent.
- Add potatoes, carrots and bacon. Stir-fry for another 10-12 minutes or until potatoes turn golden brown.
- Pour in tomatoes with the juice, chicken stock, salt, pepper, paprika and basil. Bring to the boil over moderate heat, stirring frequently.
- Reduce heat to low. Cover and simmer for 10-12 minutes or until potatoes are tender. Remove from heat. Turn mixture into a warm serving dish and serve immediately.

- 250 grams carrots, peeled and thinly sliced
- 4-6 rashes streaky bacon, chopped
- 400 grams canned peeled tomatoes
- 200 ml chicken stock

- 2 celery, peeled and coarsely chopped
- 2 stalks shallots, trimmed and coarsely chopped
- 1-2 garlic cloves, peeled and crushed
- 2 teaspoon paprika
- 1 teaspoon dried basil
- Ground black pepper and salt to taste
