GREEN POTATOES

Preparation Method :

  • Heat the oil in a shallow pan over a medium heat and add the mustard and cumin seeds. Fry for about 1 minute or until it splutters.
  • Add the onion, ginger and garlic. Fry for about 3-5 minutes or until the onion is soft and translucent.
  • Remove from the heat, add in the ground spices and salt; mix well for a minute or two.
  • Add a cup of water and the green beans. Cover and cook over a low heat. Stir occasionally for 8-10 minutes or until soft and tender.
  • Add the tomatoes and simmer for 10-15 minutes, stirring frequently, to thicken and reduce the sauce until it is fairly dry.
  • Sprinkle with the coconut and serve with Walnut and Mint Chutney.

INGREDIENTS

  • 450 grams green beans, trimmed and cut in half
  • 2 tomatoes, peeled and chopped
  • 50 ml Cooking oil
  • 1 onion, finely sliced
  • ½ teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 1 inch piece of ginger, grated
  • 3-4 garlic cloves, crushed
  • Salt to taste
  • 1 tablespoon desiccated coconut

Ground Spices

  • 1 teaspoon chilli powder
  • 1 teaspoon ginger paste
  • ½ teaspoon turmeric powder
