Preparation Method :
- Heat the oil in a shallow pan over a medium heat and add the mustard and cumin seeds. Fry for about 1 minute or until it splutters.
- Add the onion, ginger and garlic. Fry for about 3-5 minutes or until the onion is soft and translucent.
- Remove from the heat, add in the ground spices and salt; mix well for a minute or two.
- Add a cup of water and the green beans. Cover and cook over a low heat. Stir occasionally for 8-10 minutes or until soft and tender.
- Add the tomatoes and simmer for 10-15 minutes, stirring frequently, to thicken and reduce the sauce until it is fairly dry.
- Sprinkle with the coconut and serve with Walnut and Mint Chutney.
INGREDIENTS
- 450 grams green beans, trimmed and cut in half
- 2 tomatoes, peeled and chopped
- 50 ml Cooking oil
- 1 onion, finely sliced
- ½ teaspoon cumin seeds
- ½ teaspoon mustard seeds
- 1 inch piece of ginger, grated
- 3-4 garlic cloves, crushed
- Salt to taste
- 1 tablespoon desiccated coconut
Ground Spices
- 1 teaspoon chilli powder
- 1 teaspoon ginger paste
- ½ teaspoon turmeric powder
