GOATS'CHEESE AND MASHED POTATO GRATIN

Preparation Method :
- Grease 19 cm x 26 cm ovenproof dish (1.5 litre/6 cup capacity).
- Boil, steam or microwave potatoes until soft; drain.
- Mash potatoes with butter until smooth, stir in gruyere cheese.
- Heat 2 tablespoons of the oil in heavy-based pan, add onions and thyme, cook, stirring, over medium heat about 20 minutes or until onions are very soft and well browned.
- Spread one-third of the onion mixture over base of prepared dish, spread with potato mixture, top with remaining onion mixture.
- Dot top with level teaspoon; goats' cheese, brush cheese with remaining oil.
- Bake in hot oven about 15 minites or until cheese is lightly browned.

- 1.5 kg potatoes, peeled, chopped
- 50 grams butter, melted
- 100 grams grated gruyere cheese
- 100 ml Peanut oil
- 500 gramss onions, sliced
- 1 tablespoon fresh thyme leaves
- 100 grams goats' cheese
