DRY POTATO TAKARI

Preparation Method :
- Heat oil and stir-fry mustard seeds over medium heat till the seeds begin to pop.
- Add the diced potatoes with onion, salt and turmeric powder.
- Fry until potatoes turn light brown.
- Add half the quantity of the measured water with chilli powder and sugar.
- Fry until mixture becomes dry. Add remaining water.
- Cover and cook until potatoes are tender.
- Add coriander leaves and lemon juice. Cook until mixture turns dry.
- Add tomato slices. Stir in garam masala and mix well.
- Remove from heat and serve.
INGREDIENTS
- 1 kg large potatoes, peeled and diced
- 100 ml cooking oil
- 2 tomatoes, sliced
- 1 onion, peeled and chopped
- 100 ml water
- 1½ teaspoon salt
- 1 teaspoon mustard seeds
- 1 teaspoon ground turmeric
- Chilli powder, to taste
- 3 teaspoon lemon juice
- 1 teaspoon garam masala
- ½ teaspoon sugar
- 1 teaspoon chopped coriander leaves
