DRY POTATO TAKARI

Preparation Time :
15 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Heat oil and stir-fry mustard seeds over medium heat till the seeds begin to pop.
  • Add the diced potatoes with onion, salt and turmeric powder.
  • Fry until potatoes turn light brown.
  • Add half the quantity of the measured water with chilli powder and sugar.
  • Fry until mixture becomes dry. Add remaining water.
  • Cover and cook until potatoes are tender.
  • Add coriander leaves and lemon juice. Cook until mixture turns dry.
  • Add tomato slices. Stir in garam masala and mix well.
  • Remove from heat and serve.

INGREDIENTS

  • 1 kg large potatoes, peeled and diced
  • 100 ml cooking oil
  • 2 tomatoes, sliced
  • 1 onion, peeled and chopped
  • 100 ml water
  • 1½ teaspoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground turmeric
  • Chilli powder, to taste
  • 3 teaspoon lemon juice
  • 1 teaspoon garam masala
  • ½ teaspoon sugar
  • 1 teaspoon chopped coriander leaves
