CUMIN POTATOES

Preparation Method :

  • Heat the oil in a heavy-based shallow pan over a medium heat and add the whole spices.
  • When the seeds begin to sizzle add in the potatoes and fry for about 10-12 minutes or until they are golden.
  • Add the ground spices, salt and fresh green chillies, continue to fry for a further 3-5 minutes.
  • Stir in the lemon juice and half a cup of water. Simmer to low flame, cover and cook for about 5 minutes or until the potatoes are tender.
  • Garnish with fresh coriander and serve as a starter.

INGREDIENTS

  • 750 grams potatoes, peeled, sliced
  • 1-2 green chillies, sliced lengthways  
  • 50 ml IDHAYAM sesame oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh coriander, chopped

Whole Spices

  • ½ teaspoon cumin seeds
  • ½ teaspoon mustard seeds

Ground Spices

  • ¾ teaspoon ginger paste
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon cumin seeds
