CASHEW POTATO CURRY

Preparation Method :
- Peel and cut each potato into 2 pieces.
- Soak the cashew nuts in hot water for 20 minutes. Drain water and grind cashew nuts into a paste
- Grind together onion and ginger.
- Preheat oil in a big frying pan. Add cardamoms and cinnamon sticks.
- Add onion paste and fry till golden brown.
- Add potatoes and cashew paste.
- Fry for 3 minutes. Add red chili powder and grated coconut, Fry for another 3-4 minutes.
- Add salt and water.
- Cook till water almost dries up. Add garam masala. Remove from fire.
INGREDIENTS
- 8 medium sized boiled potatoes
- 250 grams cashew nuts
- 4 chopped onions
- 4 tablespoons chopped ginger
- 6 tablespoons IDHAYAM MANTRA peanut oil
- 4 black cardamoms
- 4 pieces of cinnamon stick
- 2 teaspoon red chili powder
- 200 grams grated coconut
- Salt to taste
- 500 ml water
- 4 teaspoons garam masala
