ALOO KA SALAN

Preparation Method :

  • Cut each potato with skin lengthwise, into 8 pieces. Boil till they get tender.
  • Heat oil in a medium frying pan over medium heat Add green cardamoms, cloves and cinnamon stick and stir till green cardamoms begin to change color.
  • Add ginger and garlic paste and stir for 2 minutes. Add onion paste and fry for 3-4 minutes.
  • Add coriander powder, red chili powder and turmeric powder dissolved in 3 tablespoons water. Stir-fry till moisture evaporates.
  • Remove frying pan from fire. Stir in yogurt and return frying pan to fire and fry till the fat leaves the sides.
  • Add water and bring to a boil over high heat. Reduce to medium heat, and add potatoes and salt. Bring to a boil.
  • Simmer and stir for 5 minutes. Add garam masala and remove from fire.
  • Garnish with green chilies and tomato.

INGREDIENTS

  • 8 medium potatoes
  • 6 tablespoons IDHAYAM sesame oil
  • 8 green cardamoms
  • 4 cloves
  • 2 cinnamon stick
  • 4 teaspoon ginger paste
  • 4 teaspoons garlic paste
  • 400 grams onion paste
  • 4 teaspoons coriander powder
  • 2 teaspoon red chili powder 
  • 1 teaspoon turmeric powder
  • 1 liter water
  • 200 ml whipped yogurt
  • Salt to taste
  • 1 teaspoon garam masala
  • 8 slit green chilies
  • 2 finely chopped tomato 
  • 2 tablespoon lemon juice
