WARM ENDIVE AND POTATO SALAD

Preparation Method :
- Cut potatoes into 5mm slices. Heat oil in pan, add garlic, cook potatoes in batches until brown and tender; drain on absorbent paper.
- Add rocket and endive to same pan, cook, stirring, until rocket and endive are just wilted.
- Add potatoes, vinegar and mustard, cook, stirring, until heated through.
- Stir in radishes and chives until just combined, serve immediately.
INGREDIENTS
- 1 kg new baby potatoes
- 2 tablespoons peanut oil
- 2 cloves garlic, crushed
- 150 grams rocket
- 300 grams curly endive
- 1 tablespoon balsamic vinegar
- 1 tablespoon seeded mustard
- 1 bunch radishes, sliced
- 2 tablespoons chopped fresh chives
