SWEET POTATOES SALAD WITH PEPPERS AND HAM

Preparation Method :
- Cut Sweet potatoes into 1 cm x 7cm strips, add to pan of boiling water, simmer, uncovered, about 4 minutes or until Sweet potatoes is just tender, rinse under cold water; drain well.
- Cut peppers and ham into thin strips.
- Heat oil in pan, add peppers, ham, onions and garlic, cook, stirring, until onions and peppers are very soft.
- Toss Sweet potatoes gently with pepper mixture and dressing; serve warm or cold.
Dressing:
Combine all ingredients in shake well.

- 750 grams Sweet potatoes
- 200 grams yellow pepper
- 200 grams red pepper
- 200 grams sliced ham
- 2 tablespoons extra peanut oil
- 300 grams onions, sliced
- 2 cloves garlic, crushed
Dressing:
- 100 ml extra Sesame oil
- 100ml red wine vinegar
- 2 teaspoons brown sugar
