POTATO AND RADISH CRUNCH

- Melt butter in a frying pan.
- When sizzling, add diced bread and fry gently until golden.
- Drain and set it aside.
- Combine potato cubes, fried croutons, cucumber, radishes, peanuts and chives in a salad bowl.
- Taste and adjust seasoning with salt and pepper.
- Add sour cream and mix gently before serving.
INGREDIENTS
- 550 grams potatoes, cooked, drained, peeled and cut into cubes
- 500 grams red radishes, thinly sliced
- 55 grams butter
- 100 grams sour cream
- 3 thick slices white bread, crusts removed, cut into ½ inch cubes and fried
- 4 inch piece cucumber, cubed
- 35 grams dry roasted peanuts
- 1 bunch, snipped chives
- Ground black pepper and salt to taste
