POTATO AND PRAWN SALAD

Preparation Method :
- Put potatoes into a pot of boiling salted water.
- Return to the boil, reduce heat and simmer for 15-20 minutes or until tender.
- Drain, peel and chop potatoes roughly.
- Mix with mayonnaise, tarragon, salt and pepper to taste. Leave to cool for about an hour.
- When cool, mix the potatoes with chopped eggs and prawns.
- Transfer the prawn mixture into a deep serving dish.
- Serve with sliced cucumber and garnish with snipped chives.

- 550 grams potatoes
- 100 grams prawns, cooked, peeled and chopped
- 50 grams mayonnaise
- 50 grams dried tarragon
- Ground black pepper and salt to taste
- 2 eggs, hard-boiled, shelled and chopped
- 1 cucumber, sliced
- 1 small bunch chives, snipped
