PEAR, POTATO AND BLUE VEIN CHEESE SALAD

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Boil, steam or microwave potatoes until just tender; drain, cool.
  • Combine potatoes and dressing in bowl, cover, refrigerate 1 hour; drain, reserve dressing.
  • Combine potatoes and pears in bowl with sprouts and cheese; mix gently.
  • Pour over reserved dressing, sprinkle with nuts.

Dressing:

  • Combine all ingredients in jar; shake well.



INGREDIENTS

  • 1.5 kg new baby potatoes, halved
  • 500 grams baby pears, halved
  • 150 grams snow pea sprouts
  • 50 grams blue vein cheese, crumbled
  • 50 grams pine nuts, toasted

Dressing

  • 100 ml light Sesame oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh chives
  • 2 teaspoons lemon juice
