MARINATED BEEF AND POTATO SALAD

Preparation Method :
- Cut beef into thin strips. Combine beef, walnut oil, honey, vinegar, fennel and pepper in bowl; cover, refrigerate overnight.
- Heat olive oil in pan, cook beef in batches over high heat until browned and tender.
- Boil, steam or microwave potatoes until tender; cool. Combine beef, potatoes, tomatoes and snow peas in bowl; mix well.
- Place snow pea sprouts in serving dish, top with beef mixture, drizzle with dressing.
Dressing:
- Combine all ingredients in jar; shake well.
INGREDIENTS
- 500 grams beef eye-fillet
- 1 tablespoon walnut oil
- 1 tablespoon honey
- 50 ml red wine vinegar
- 1 teaspoon ground fennel pinch cayenne pepper
- 1 tablespoon sesame oil
- 750 grams new baby potatoes, halved
- 250 grams cherry tomatoes
- 100 grams snow peas, halved
- 150 grams snow pea sprouts
Dressing
- 100 ml extra sesame oil
- 2 teaspoons red wine vinegar
- 2 tablespoons seeded mustard
- 1 teaspoon mild sweet chili sauce
- 1 teaspoon honey
