CURRIED POTATO SALAD

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Boil, steam or microwave potatoes until tender.
  • Combine warm potatoes, shallots, sultanas, herbs and dressing in bowl; mix well. Sprinkle with nuts.

Dressing:

  • Combine all ingredients in bowl; mix well.

INGREDIENTS

  • 1.5 kg new baby potatoes, peeled
  • 4 green shallots, chopped
  • 50 grams sultanas
  • 1 tablespoon chopped fresh coriander
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons pistachios, toasted

Dressing:

  • 125 ml mayonnaise
  • 125 ml sour cream
  • 2 tablespoons fruit chutney
  • 1 teaspoon bottled red curry paste
  • 1 small clove garlic, crushed
