BEETROOT AND POTATO SALAD WITH FRESH DATES

Preparation Method :
- Boil, steam or microwave potatoes until just tender.
- Boil, steam or microwave unpeeled beetroot until tender; drain, cool.
- Peel beetroot, cut into wedges. Combine all ingredients in bowl; mix well.
- Pour over dressing; mix well.
Dressing:
- Combine all ingredients in jar; shake well.
INGREDIENTS
- 1kg unpeeled potatoes, chopped
- 750 grams beetroot
- 2 sticks celery, sliced
- 4 green shallots, sliced
- 150 grams green cucumber, sliced
- 100 grams fresh dates, sliced
Dressing
- 1 tablespoon chopped fresh coriander
- 2 tablespoons chopped fresh mint
- 2 tablespoons red wine vinegar
- 150 ml Sesame oil
