BACON AND BEAN SALAD WITH PEPPER DRESSING

Preparation Method :
- Place beans in bowl, cover well with cold water, cover; stand overnight.
- Drain beans, add to pan of boiling water, simmer, uncovered, about 30 minutes or until beans are tender; drain, rinse under cold water; drain.
- Boil, steam or microwave potatoes and snow peas separately until just tender; cool. Cook bacon in dry pan, stirring occasionally, until browned; drain on absorbent paper, cool.
- Tear lettuce into medium-sized pieces, combine with beans, potatoes, snow peas and bacon in bowl; toss well. Drizzle salad with dressing, top with cheese.
Dressing:
- Quarter peppers, remove seeds and membranes.
- Grill peppers, skin side up, until skin blisters and blackens. Peel away skin, blend or process peppers until smooth.
- Combine peppers, oil, vinegar and sugar in jar; shake well.
INGREDIENTS
- 100 grams dried haricot beans
- 750 grams potatoes, peeled, chopped
- 80 grams snow peas, halved
- 6 bacon rashers, chopped
- 1 medium Cos lettuce
- 50 grams parmesan cheese flakess
Dressing:
- 500 grams red peppers
- 150 ml Sesame oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon sugar
