Preparation Method :
- Mix the grated potatoes with chopped onion, parsley, salt and pepper into a large bowl.
- Heat butter in a heavy-based frying pan. Add potato mixture and pat lightly into a large, flat and round cake with a spatula.
- Cook the potato mixture over low heat for 10-12 minutes or until the underside is crusty and browned.
- Grease a plate with oil. Using a spatula, turn rösti onto plate and slide it back onto the frying pan.
- Gently fry for another 10 minutes or until the underside is crisp and well- browned. Slide onto a warm serving dish.
- Garnish with a little chopped chives and serve immediately.

- 1 kg potatoes, scrubbed, boiled, drained, peeled and grated
- 50 grams butter
- 100 grams onion, peeled and finely chopped
- 2 tablespoon parsley, finely chopped
- 1 teaspoon finely chopped chives
- Cooking oil
- Ground black pepper and salt to taste
