ROASTED POTATOES WITH SESAME SEEDS

Preparation Method :
- Preheat the oven to 190°C / 375°F / Gas mark 5.
- In a large bowl mix all of the ingredients.
- Add the potatoes to the bowl and leave to marinate at least for an hour or two.
- Place potato on a baking tray.
- Sprinkle with the sesame seeds and bake in the preheated oven for about 30-35 minutes until golden. Baste with the oil.
- Serve with Mushroom Rice.
INGREDIENTS
- 1 kg potatoes, boiled, drained
- 2-3 garlic cloves, crushed
- 50 ml natural yogurt
- 25 grams finely chopped fresh coriander
- 1 tablespoon lemon juice
- 1 tablespoon IDHAYAM sesame oil
- 1 inch piece of ginger, grated
- 1 small green chilli, deseeded and chopped
- Salt and freshly ground black pepper, to taste
- Sesame seeds, to sprinkle
- IDHAYAM sesame oil, for basting
- ½ teaspoon cumin seeds
Ground Spices
- ½ teaspoon coriander seeds
- ½ teaspoon cumin seeds
- ¼ teaspoon ginger paste
- ½ teaspoon fennel seeds
- ½ teaspoon chilli powder
