ROASTED POTATOES WITH SESAME SEEDS

Cooking Time :
45 minutes

Preparation Method :

  • Preheat the oven to 190°C / 375°F / Gas mark 5.
  • In a large bowl mix all of the ingredients.
  • Add the potatoes to the bowl and leave to marinate at least for an hour or two.
  • Place potato on a baking tray.
  • Sprinkle with the sesame seeds and bake in the preheated oven for about 30-35 minutes until golden. Baste with the oil.
  • Serve with Mushroom Rice.

INGREDIENTS

  • 1 kg potatoes, boiled, drained
  • 2-3 garlic cloves, crushed
  • 50 ml natural yogurt
  • 25 grams finely chopped fresh coriander
  • 1 tablespoon lemon juice
  • 1 tablespoon IDHAYAM sesame oil
  • 1 inch piece of ginger, grated
  • 1 small green chilli, deseeded and chopped
  • Salt and freshly ground black pepper, to taste
  • Sesame seeds, to sprinkle
  • IDHAYAM sesame oil, for basting
  • ½ teaspoon cumin seeds

Ground Spices

  • ½ teaspoon coriander seeds
  • ½ teaspoon cumin seeds
  • ¼ teaspoon ginger paste
  • ½ teaspoon fennel seeds
  • ½ teaspoon chilli powder
