Preparation Method :
- Boil, steam or microwave potatoes until almost tender; drain.
- Heat oil in large pan, add onion, pepper, zucchini and rosemary; cook, stirring, until onion is soft.
- Add potatoes, cook about 10 minutes or until potatoes are lightly browned.
- Pour over lemon juice, add garlic and basil; mix well.
INGREDIENTS
- 1 kg new baby potatoes, halved
- 100 ml Peanut oil
- 300 grams red Spanish onion, sliced
- 150 grams red pepper, sliced
- 250 grams zucchini, sliced
- 2 teaspoons fresh rosemary leaves
- 50 ml lemon juice
- 2 cloves garlic, crushed
- 1 tablespoon shredded fresh basil leaves
