ROASTED POTATOES PROVENCAL

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Boil, steam or microwave potatoes until almost tender; drain.
  • Heat oil in large pan, add onion, pepper, zucchini and rosemary; cook, stirring, until onion is soft.
  • Add potatoes, cook about 10 minutes or until potatoes are lightly browned.
  • Pour over lemon juice, add garlic and basil; mix well.

 

INGREDIENTS

  • 1 kg new baby potatoes, halved
  • 100 ml Peanut oil
  • 300 grams red Spanish onion, sliced
  • 150 grams red pepper, sliced
  • 250 grams zucchini, sliced
  • 2 teaspoons fresh rosemary leaves
  • 50 ml lemon juice
  • 2 cloves garlic, crushed
  • 1 tablespoon shredded fresh basil leaves
