Preparation Method :
- Combine oil, garlic, potatoes, onions, mushrooms and rosemary in large baking dish.
- Bake, uncovered, in hot oven, stirring occasionally, about 45 minutes or until potatoes are browned and tender.
- Add olives and tomatoes; mix well. Sprinkle with parsley.

- 100 ml Cooking oil
- 6 unpeeled cloves garlic
- 1 kg potatoes, unpeeled, quartered
- 150 grams onions
- 350 grams button mushrooms
- 1 tablespoon fresh rosemary leaves
- 75 grams black olives
- 50 grams drained sun-dried tomatoes, halved
- 1 tablespoon chopped fresh parsley
