Preparation Method :
- Combine the oil with garlic in a large and shallow roasting tin. Place in preheated oven at 190°C / 375°F / Gas mark 5 for about 5-7 minutes.
- Cut the potatoes into wedges, pat dry with the paper towels.
- Remove the roasting tin from oven and put over low heat on top of hob.
- Add potatoes and toss with thyme in hot oil until well coated. Return to oven and roast for half an hour or until golden brown.
- Adjust seasoning with salt and black pepper before serving.

- 1 kg potatoes
- 25 ml IDHAYAM sesame oil
- 3-4 cloves garlic, crushed
- 1 tablespoon rosemary leaves
- Ground black pepper and salt to taste
