ROAST POTATOES WITH PARSNIPS AND BACON ROLLS

Preparation Method :
- Boil potatoes 10 minutes; drain.
- Combine oil, butter, potatoes, parsnips and onions in large baking dish; mix well.
- Bake in very hot oven 30 minutes.
- Cut each bacon rasher in half, lengthways, roll up and secure with toothpicks.
- Add to potato mixture, bake further 15 minutes or until bacon is crisp.
- Remove toothpicks, sprinkle with sage.
INGREDIENTS
- 1 kg old potatoes, peeled
- 100 ml Peanut oil
- 50 grams butter, melted
- 350 grams parsnips, halved
- 500 grams onions, quartered
- 6 bacon rashers
- 2 teaspoons chopped fresh sage
