ROAST POTATOES WITH GARLIC AND THYME

Preparation Method :
- Cook potatoes in pan of boiling water about 10 minutes or until tender; drain.
- Pat potatoes dry with absorbent paper.
- Heat oil in a baking dish in moderately hot oven 10 minutes.
- Add potatoes, bake 45 minutes, add garlic and thyme; mix well.
- Bake further 30 minutes or until potatoes are browned.
- Stir potatoes occasionally during cooking.

- 1.5 kg old potatoes, peeled, chopped
- 100 ml Peanut oil
- 8 cloves garlic, halved
- 12 sprigs fresh thyme
