POTATO AND SWEET POTATOES CRISPS

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Peel potatoes and Sweet potatoes, cut into 1 mm slices, placing slices into a bowl of cold water.
  • Drain potato slices, pat dry.
  • Deep- fry potato slices in hot oil in batches, turning occasionally, until lightly browned.
  • Drain in single layers on absorbent paper. Serve with cherry tomato sauce.

Cherry Tomato Sauce:

  • Blend or process all ingredients until smooth.

 

INGREDIENTS

  • 1 kg Old Potatoes
  • 800 grams Sweet Potatoes
  • Peanut oil for deep-frying

Cherry Tomato Sauce

  • 250 grams cherry tomatoes
  • 1 clove garlic, crushed
  • 1 tablespoon lemon juice s
  • 1 tablespoon mild sweet chili sauce
  • ¼ teaspoon ground black pepper
  • 125 ml Sesame oil
