STUFFED PURIS

Preparation Method :

  • Add semolina, oil, ajwain and salt to refined flour. Knead into a stiff dough using water.
  • Divide the dough into 10 equal portions. Make balls. Dust with a little flour and roll into 3 inches diameter discs.
  • Preheat oil in a small frying pan over high heat. Deep fry the puris one by one.
  • Leaving oil, remove excess oil from the frying pan. Add onion and fry till golden brown.
  • Add green chilies, green peas, salt and turmeric. Fry for 3-4 minutes.
  • Peel and mash the potatoes and add to the frying pan. Fry till potatoes turn golden brown. Remove from fire.
  • Divide potatoes into 10 equal portions. Break the upper crust of each fried disc with a finger.
  • Put a portion each of the cooked potatoes on each disc.

INGREDIENTS

  • 400 grams semolina
  • 500 ml peanut oil 
  • 1 teaspoon ajwain 
  • Salt to taste
  • 400 grams refined flour 
  • Water
  • 2 chopped onion
  • 2 chopped green chilies 
  • 200 grams green peas
  • 1 teaspoon turmeric powder 
  • 4 large sized boiled potatoes
