POTATOES STUFFED IN PURIS

Preparation Method :
- Peel and mash the potatoes.
- Preheat 2 tablespoons oil in a small frying pan over high heat. Add onion and green chilies and fry till golden brown.
- Add mashed potatoes, salt and pepper. Fry for 5 minutes. Add coriander leaves. Transfer to a plate.
- Knead wheat flour with water. Divide into 8 equal portions.
- Dust the balls with a little flour. Flatten 1 ball between the palms to form a 2 inches diameter round disc.
- Place ⅛ portion of the potato filling in the middle, enfold and properly seal the edges.
- Dust with flour and flatten with the rolling pin into 5-6 inches diameter disc. Repeat process for the remaining flour and potato filling.
- Preheat the remaining oil in the frying pan over high heat. Fry the discs, one by one over medium heat till they turn pale brown on both the sides. Drain excess oil on absorbent paper.
