POTATO PURI (FRIED POTATO BREAD)

Cooking Time :
50 minutes

Preparation Method :

  • Add mashed potatoes with the sifted flour and salt into a bowl. Mix with a wooden spoon and add water, a little at a time, until firm dough is formed.
  • Knead thoroughly on a floured surface with hands for about 5-10 minutes.
  • Roll dough into a ball. Cover and leave to stand at least for 20-30 minutes. Divide into 16 even pieces.
  • Roll each piece into a small ball and flatten. Roll out into discs.
  • Heat the oil until very hot. Slide a puri in, as soon as it puffs up and turns golden on the underside, flip over and cook until the other side is golden.
  • Drain and serve hot with curries, dhal or vegetables.

INGREDIENTS

  • 250 grams all- purpose flour, sifted
  • 250 grams potatoes, peeled, boiled, drained and mashed
  • 1½ teaspoon salt
  • 100 ml warm water
  • Cooking oil for deep-frying
